the S's have it

Saturday Sour Cream and Spinach Pancakes

1 batch pancake batter

1 1/2 cups fresh spinach

1/2 cup sour cream

3 eggs

1/3 cup honey

1 T flaxseed meal (optional)

Yes, I made this recipe up. Yes, it's delicious and nutritious!

Prepare a batch of pancake batter. Set aside.

Blend the spinach in a blender or food processor until completely chopped. It will make about 1/2 cup. Set aside.

Stir in sour cream to the batter. Combine well with a fork until smooth. Add honey and eggs. Add the chopped spinach and the flaxseed meal to the batter and stir.

Make into pancakes as normal.

That sure sounds, uh, interesting. But, I guess if you like zucchini bread it would be a similar idea. Might be worth trying. It would certainly give the plain old pancake a little nutritional punch.

Although I shouldn't knock it before I try it right? I try to each healthy, but this one, not sure about it! Only you my dear friend would see that recipe and think...Hmmmm I think Im going to try it. Most of us would see the title of that, and breeze right on by it. I am wondering the same as the comment above me....do you each syrup with spinach pancakes;)

Great idea! I love this!

I'm constantly coming up with "new" pancake recipes. (Basically I just throw whatever sounds healthy and yummy into them. :) ) The current fave at our house is beet and blueberry pancakes. Pureed beets, unsweetened applesauce, a little vanilla, cinnamon, a couple of eggs and some pancake batter make for good (pink!) eats! No syrup required. :)

These look good..do you think you could substitute the sour cream for cream cheese? Allergy to it in this house..throat swollen shut allergy which stinks cause its good stuff! I am going to give it a go..cream cheese works with anything, I think!

Saw your tweet about the turtle eggs. My family and I had the awesome opportunity last summer to watch a momma turtle dig the hole, lay her eggs, and then watch the babies hatch and find their way to the pond. Neatest thing ever!!!

Great recipe! I "hide" pureed spinach in almost EVERYTHING! I'm a very picky eater (and it looks like my younger son will be as well), so stuffing foods I like with pureed spinach, carrots, sweet potatoes, etc. is almost the only way I get my veggies!

I haven't tried it with pancakes... yet, but definitely will next weekend!

Thank you for another brilliant recipe. We just had your MckPancakes for dinner and they were fantastic!!! My entire crew enjoyed them. Then I come to check in and find these. I have been gone the past few days camping with my family and I half literally spent the last almost 2 hours "updating" myself to your blog and Tweets (and all the links I wanted to check out). I really wish sometimes that I had a cell phone (yes, we are weird like that) so I could Tweet you back! There are so many things that I want to say all the time.
I also wanted to say that I sometimes ponder how I can go on and on in my comments (just like this) to someone I don't really know, well at least not in real life. I guess I am just lucky that you are willing to read them all :)

Thanks SO Much! I see you actually have recipe ideas...duh, never noticed :) I want you to know you have encouraged me to experiment more. I love couscous and now so do my little grandkids that live with me :) I made them couscous with cinnamon, dried cranberries, walnuts, a little splenda, and a few tablespoons of half and half and they thought they were having a desert! Yummmmy! But then they think everything I make is Great! Cooked apples to them is desert as well because I serve it last :)Anyway hope all stays quiet for you, always in our prayers :)

Catching up on your posts. I think you look beautiful in the picture you posted Friday. I feel a little weird telling another woman she is beautiful, but we should all encourage each other and I really do think you look lovely in that one. Didn't see any gum though.

I will really try to remember to come to your site and find all the recipes I meant to write down when I read them the first time. Maybe I'll be lucky and a magic recipe button will show up soon. Maybe it will even have printable recipes.

I'm not sure my husband will go for spinach in pancakes, but he surprises me all the time.

LOVE the recipie ideas! Keep them coming! I like to mix in a little Laughing Cow cheese (the soft stuff), with chopped spinach and spread it on a piece of toast. I did this for my son to get him to eat spinach and now we both love it!

I don't post too often on here but I thought that I would today. You see, today would have been my daughters third birthday and on this day (and many others), I ALWAYS think of Holland. I have thought of sharing this with you before as you have gone through things with S and his health but I figured someone else had already shared it with you. But today, being Hope's birthday, I thought that I would share it just in case you had never heard it...

After months of eager anticipation, the day finally arrives. You pack your bags and off you go. Several hours later, the plane lands. The stewardess comes in and says, 'Welcome to Holland.' 'Holland?' you say, “What do you mean Holland? I signed up for Italy I’m supposed to be in Italy. All my life I’ve dreamed of going to Italy.' But there’s been a change in flight plan. They’ve landed in Holland, and there you must stay.

Made these this morning and they were fantastic! I must admit that I was in a hurry and read my own handwriting incorrectly. I added 1.5 c of sour cream (.5c reg, .5c lite &.5c plain yogurt), so mine were more like crepes, but good regardless. Even my doubting husband went back for more. Thanks for posting!

happy belated satuday on sunday. this recipe sounds delicious and i am going to not only try it myself, but send it to my son in nyc, vegetarian and most often vegan unless i can get some fat into him :) this sounds like something he will love.

I'm confused about something...

In you last post about the April Rose situation (which by the way you had very little to do with but took it upon yourself to be the speaker of and to the "people") didn't you say that the issue was closed and you would no longer be talking about it? Didn't you say that it was Satan who wanted everyone to talk about it and gossip? Didn't you ask everyone to discussing it, pray over it and move on?

Then why oh why did you do a segment on Good Morning America perpetuating the drama, essentially promoting yourself and giving more attention to a very disturbed individual?

It just seems very hypocritical.

You are not living as an example you are "Do as I say, not as I do".

Never fear though, the Sheeple will always need a false idol to worship.

Made these this morning for my 7 & 14 year olds and they LOVED them. Honestly, my daughter [7] said the best thing about these was the spinach and honey. She can't wait to have them again. We drizzled a very, very small amount of honey on the cakes when they were done.

mmmm...made these with my kids on vacation this week. My four year old protested when she saw the spinach, but later described these "popeye pancakes" as "the best, EVER!" The babies loved them too. Me, I've been sneaking the extras out of the freezer for snacks this week! Love them dipped in honey.

My kids and I made these this morning and topped them with thawed frozen berries (kind of syrupy), fresh berries, and whipped cream. My husband ate them, as well. He thinks this whole food, healthy eating thing is a phase, but I find it's easier to feed my kids homemade hummus and hardboiled eggs than Kraft Mac & Cheese, so I think I'm sticking with it! I have an almost 6-month-old and I'm excited to try the homemade baby food from our meals as well. Already have my split peas, avocado, steel cut oats, and flaxseed meal. Thanks for the tips!
